G\u00f6k\u00e7e, &#8220;Ancak beyaz et y\u00fcksek oranda doymam\u0131\u015f ya\u011f asitleri i\u00e7ermesinden dolay\u0131 oksidasyona kar\u015f\u0131 k\u0131rm\u0131z\u0131 ete oranla daha hassast\u0131r. Sonu\u00e7ta bu hassasiyet neticesinde ortaya \u00e7\u0131kan oksidasyon nedeniyle beyaz etin lezzet, renk, kalite gibi \u00f6zelliklerinde kay\u0131plar ya\u015fanmaktad\u0131r. Ayr\u0131ca bu olumsuz durumlara ba\u011fl\u0131 olarak mikroorganizma geli\u015fimi g\u0131dalarda bozulmalara ve t\u00fcketicilerde g\u0131da kaynakl\u0131 zehirlenmelere neden olmaktad\u0131r. Beyaz ette bu olumsuzluklar\u0131 ortadan kald\u0131rmaya y\u00f6nelik \u00f6nemli stratejilerden biri antioksidan kullan\u0131m\u0131d\u0131r. Beyaz ette antioksidan kullan\u0131m\u0131 yemlere, taze ete ve et \u00fcr\u00fcnlerine ilave etme \u015feklinde uygulanabilmektedir. Biz taze beyaz ete uygulad\u0131\u011f\u0131m\u0131z me\u015fe peliti ekstrakt\u0131 ile bahsetti\u011fimiz olumsuz durumlar\u0131 \u00f6nemli derecede engelledik&#8221; dedi.<\/p>\n<p>Do\u011fal antioksidanlar tercih ediliyor<\/p>\n<p>Sentetik antioksidanlar et \u00fcr\u00fcnleri ba\u015fta olmak \u00fczere bir\u00e7ok g\u0131dada oksidasyona kar\u015f\u0131 kullan\u0131lmalar\u0131na ra\u011fmen, muhtemel toksik etkileri ve t\u00fcketiciler nezdinde olumsuz intibaya sahip olmas\u0131 nedeniyle \u00fcreticilerin do\u011fal antioksidan kaynaklar\u0131na y\u00f6neldiklerine de\u011finen Prof. Dr. G\u00f6k\u00e7e, \u201cDo\u011fal antioksidan kayna\u011f\u0131 olarak bitkisel ve hayvansal k\u00f6kenli katk\u0131lar kullan\u0131lmakta, \u00f6zellikle fenolik madde miktar\u0131 y\u00fcksek bitkisel katk\u0131lar daha \u00e7ok tercih edilmektedir.
