﻿{"id":1529849,"date":"2020-08-25T00:01:43","date_gmt":"2020-08-24T21:01:43","guid":{"rendered":"http:\/\/www.erzurumflas.com\/gaziantep-kurutmaligi-dunya-mutfaklarinin-tercihi-oldu\/"},"modified":"2020-08-25T00:01:47","modified_gmt":"2020-08-24T21:01:47","slug":"gaziantep-kurutmaligi-dunya-mutfaklarinin-tercihi-oldu","status":"publish","type":"post","link":"https:\/\/www.erzhaber.com\/?p=1529849","title":{"rendered":"Gaziantep kurutmal\u0131\u011f\u0131 d\u00fcnya mutfaklar\u0131n\u0131n tercihi oldu"},"content":{"rendered":"<p><img decoding=\"async\" src=\"http:\/\/www.erzurumflas.com\/wp-content\/uploads\/2020\/08\/gaziantep-kurutmaligi-dunya-mutfaklarinin-tercihi-oldu_208495d.jpg\" width=\"600\">UNESCO taraf\u0131ndan Gastronomi kenti ilan edilen Gaziantep\u2019in me\u015fhur kurutmal\u0131klar\u0131 d\u00fcnya mutfa\u011f\u0131n\u0131n tercihi haline geldi.<\/p>\n<p>Gaziantep Ticaret Borsas\u0131 (GTB) Y\u00f6netim Kurulu Ba\u015fkan\u0131 Mehmet Ak\u0131nc\u0131, Gaziantep\u2019in as\u0131rl\u0131k mutfak lezzetleri aras\u0131nda yer alan sebze kurutmal\u0131klar\u0131n\u0131n, son y\u0131llarda d\u00fcnya mutfaklar\u0131 taraf\u0131ndan da tercih edilen \u00f6zel bir \u00fcr\u00fcn haline d\u00f6n\u00fc\u015ft\u00fc\u011f\u00fcn\u00fc s\u00f6yledi.<\/p>\n<p>Kentin co\u011frafi i\u015faretli \u00fcr\u00fcnleri aras\u0131nda bulunan patl\u0131can kurutmal\u0131\u011f\u0131 ba\u015fta olmak \u00fczere biber ve kabak kurutmal\u0131klar\u0131na Avrupa ve d\u00fcnyan\u0131n \u00e7e\u015fitli \u00fclkelerinden talep oldu\u011funu kaydeden Ak\u0131nc\u0131, geleneksel y\u00f6ntemlerle haz\u0131rlanarak i\u00e7 ve d\u0131\u015f piyasaya sunulan kurutulmu\u015f sebzelerin \u00e7ok say\u0131da aileye gelir kayna\u011f\u0131 sa\u011flayan ekonomik bir de\u011fer haline geldi\u011fini ifade etti.<\/p>\n<p>D\u00fcnyada sahip oldu\u011fu mutfa\u011f\u0131 kendi ad\u0131 ile an\u0131lan ender kentlerin ba\u015f\u0131nda gelen Gaziantep\u2019te, geleneksel yemekleri ayr\u0131cal\u0131kl\u0131 ve lezzetli k\u0131lan kurutmal\u0131k sebze \u00fcretim sezonu devam ediyor.<\/p>\n<p>K\u0131\u015f mevsiminde t\u00fcketilmek \u00fczere, genellikle ev kad\u0131nlar\u0131 taraf\u0131ndan yaz ay\u0131 i\u00e7erisinde imece usul\u00fc ile haz\u0131rlanan sebze kuruluklar\u0131, Anadolu\u2019dan ve d\u00fcnyan\u0131n farkl\u0131 mutfak k\u00fclt\u00fcrlerinden talep g\u00f6r\u00fcyor.<\/p>\n<p>Gaziantep sebze kurutmal\u0131klar\u0131na \u00f6zellikle son y\u0131llarda ilgi ve talebin artt\u0131\u011f\u0131na i\u015faret eden GTB Ba\u015fkan\u0131 Ak\u0131nc\u0131, daha \u00f6nceleri y\u00f6resel bir \u00fcr\u00fcn olarak sadece k\u0131\u015f aylar\u0131nda t\u00fcketilmek \u00fczere haz\u0131rlanan kurutmal\u0131klar\u0131n \u015fimdi i\u00e7 ve d\u0131\u015f piyasada t\u00fcketim potansiyeli artan bir sekt\u00f6r haline d\u00f6n\u00fc\u015ft\u00fc\u011f\u00fcn\u00fc s\u00f6yledi.<\/p>\n<p>Gaziantep kurutmal\u0131\u011f\u0131n\u0131n patl\u0131can, biber, kabak ve acur gibi yaz sebzelerinin toplan\u0131p, i\u00e7lerinin \u00f6zenle oyularak, g\u00fcne\u015fte kurutulmas\u0131 ile elde edilen bir \u00fcr\u00fcn oldu\u011funu belirten Ak\u0131nc\u0131, \u201cDo\u011fall\u0131\u011f\u0131n\u0131 ve lezzetini uygun saklama ko\u015fullar\u0131nda uzun s\u00fcre kaybetmeyen sebze kuruluklar\u0131 bu \u00f6zelli\u011finden dolay\u0131 yurt i\u00e7i ve yurt d\u0131\u015f\u0131 piyasalardan talep g\u00f6rmekte. T\u00fcrkiye kuruluk sebze \u00fcretiminin b\u00fcy\u00fck bir b\u00f6l\u00fcm\u00fc Gaziantep\u2019ten kar\u015f\u0131lanmakta. Kuruluklar, Avrupa\u2019da daha \u00e7ok T\u00fcrklerin yo\u011fun olarak bulundu\u011fu b\u00f6lgelere ve farkl\u0131 k\u0131talardaki \u00fclkelere g\u00f6nderilmekte\u201d dedi.<\/p>\n<p>Sebze kuruluklar\u0131n\u0131n geleneksel y\u00f6ntemlerle haz\u0131rland\u0131\u011f\u0131n\u0131, fabrikasyon \u00fcretimin olmamas\u0131ndan dolay\u0131 mevsimlik olarak bu i\u015fi yapan ailelere gelir kap\u0131s\u0131 olu\u015fturdu\u011funu vurgulayan Ak\u0131nc\u0131, Gaziantep kurutmal\u0131\u011f\u0131n\u0131 ayr\u0131cal\u0131kl\u0131 k\u0131lan ve tercih nedeni yapan temel fakt\u00f6r\u00fcn ise \u00fcr\u00fcn\u00fcn kalitesinde ve kentin iklim \u015fartlar\u0131nda sakl\u0131 oldu\u011funu dile getirdi.<\/p>\n<p>Kurutmal\u0131k tescili<\/p>\n<p>2019 y\u0131l\u0131nda GTB\u2019de i\u015flem g\u00f6ren kurutmal\u0131k sebze adeti ve tutarlar\u0131 hakk\u0131nda da bilgiler veren Ak\u0131nc\u0131, \u201cGe\u00e7ti\u011fimiz y\u0131l borsam\u0131zda yakla\u015f\u0131k 15 milyon 787 bin adet kurutulmu\u015f g\u0131da maddesi i\u015flem g\u00f6rd\u00fc.
