K\u0131\u015f aylar\u0131nda sofralar\u0131n vazge\u00e7ilmezi olan pekmez, \u00fcz\u00fcm hasad\u0131 ile birlikte kaynamaya ba\u015flad\u0131. T\u00fcrkiye\u2019nin en fazla \u00fcz\u00fcm ba\u011f\u0131 bulunan Mardin\u2019de ba\u011f bozumu ile dallardan toplanan \u00fcz\u00fcmler, zorlu ve u\u011fra\u015f isteyen \u00e7al\u0131\u015fman\u0131n ard\u0131ndan pekmeze d\u00f6n\u00fc\u015f\u00fcyor. Ekim ay\u0131nda \u00fcz\u00fcm hasad\u0131n\u0131n ba\u015flamas\u0131yla birlikte \u00fcreticiler yo\u011fun bir i\u015f temposu i\u00e7erisine giriyor. Toplanan \u00fcz\u00fcmler ezilerek suyu \u00e7\u0131kart\u0131l\u0131yor. Elde edilen \u015f\u0131ra b\u00fcy\u00fck bak\u0131r kazanlara konulup, beyaz toprak kar\u0131\u015ft\u0131r\u0131l\u0131yor. \u015e\u0131ran\u0131n kaynamas\u0131 ile birlikte i\u00e7ine konulan beyaz toprak ve bakteriler k\u00f6p\u00fck \u015feklinde d\u0131\u015far\u0131 at\u0131l\u0131yor. Deniz, &#8220;Maz\u0131da\u011f\u0131 pekmezi hakiki oldu\u011fundan dolay\u0131 b\u00f6lgede \u00e7ok tercih ediliyor. Pekmezin i\u00e7erisinde hi\u00e7bir katk\u0131 maddesi yok. Di\u011fer yerlerden gelen pekmezler oldu\u011fu i\u00e7in de fiyatlar d\u00fc\u015f\u00fck oluyor. \u0130stanbul, Adana, \u0130zmir gibi b\u00fcy\u00fck\u015fehirlerden de sipari\u015fler al\u0131yoruz. Genelde Diyarbak\u0131r\u2019dan yo\u011fun sipari\u015f al\u0131yoruz&#8221; diye konu\u015ftu.<\/p>\n<p>&#8220;Arac\u0131lar yerinde oturarak bizden daha fazla kar ediyor&#8221;<\/p>\n<p>\u00c7ift\u00e7i Munzur Kabak, arac\u0131lar\u0131n kendilerinden daha fazla kar elde ettiklerini dile getirerek, pekmezin bilindik noktalardan al\u0131nmas\u0131 gerekti\u011fini s\u00f6yledi. Kabak, &#8220;Bu aylarda \u00fcz\u00fcm hasad\u0131n\u0131 ger\u00e7ekle\u015ftiriyor, toplad\u0131\u011f\u0131m\u0131z \u00fcz\u00fcmleri d\u00fczg\u00fcn bir \u015fekilde ezip, \u00e7\u0131kan suyu kazanlara doldurup i\u00e7ine kire\u00e7li toprak at\u0131yoruz. Herhangi bir katk\u0131 maddesi kullanm\u0131yoruz. Kire\u00e7li toprak, suyun i\u00e7erisindeki mikroplar\u0131 \u00f6ld\u00fcr\u00fcyor. Bug\u00fcn diyelim ki \u00fcretici \u00fcretti\u011fi zaman 20 liradan sat\u0131yorsa, arac\u0131lar 35 liradan da satabiliyor.
